Cuisine Italian
Servings 9 pizza pockets

Ingredients

Pizza Dough

  • 4 cups bread flour
  • 1 tsp active dry yeast
  • 2 tsp salt
  • 2 cups water

Pizza Pocket

  • 1/3 cup all-purpose flour
  • 1 can pizza sauce
  • 1/2 cup chopped green pepper
  • 1/2 cup finely chopped fresh basil
  • 1/2 cup vegan mozzarella cheese
  • 1 chopped vegan sausage
  • 1 chopped green onion
  • 1 tbsp red pepper flakes
  • 1/4 cup olive oil

Instructions

Pizza Dough

  • To make the pizza dough, put the bread flour, active dry yeast, sea salt, and water into a large bowl and mix together. You can make the pizza dough ahead of time by putting it in a plastic bag and keeping it in the refrigerator for up to 3 days.
4 cups bread flour, 1 tsp active dry yeast, 2 tsp salt, 2 cups water

Pizza Pockets

  • Preheat your oven to 500F.
  • Chop all of the ingredients that you want to put inside of your pizza pocket. The ingredients that I listed are what I like to use, but feel free to get creative.
1/2 cup chopped green pepper, 1/2 cup finely chopped fresh basil, 1/2 cup vegan mozzarella cheese, 1 chopped vegan sausage, 1 chopped green onion, 1 tbsp red pepper flakes
  • Place your pizza dough on a lightly floured surface and separate it into 9 smaller balls of dough.
    1/3 cup all-purpose flour
  • Lightly flour a rolling pin to prevent the dough from sticking. Roll out one ball of dough into a circle or oval.
  • Place 1-2 tbsp of pizza sauce on the dough making sure to leave at least half an inch of space at the edge. Place your filling on one half of the circle, leaving space at the edge. Sprinkle a little bit of red pepper flakes on top of the filling.
1 can pizza sauce, 1 tbsp red pepper flakes
  • Fold the dough over the toppings. Pinch the edges together so the filling doesn't come out. Take a fork and press it into the folded edge around the circumference of the pizza pocket to help it to stay closed.
  • Lightly oil a baking sheet with olive oil and place the finished pizza pockets on the sheet. Brush the top of the pizza pocket with more olive oil.
    1/4 cup olive oil
  • Bake for 15 minutes. Let the pizza pockets sit for a few minutes before serving because the middle is very hot!

Notes

You can buy pre-made pizza dough from the store if you don't want to make it yourself at home.
My favorite vegan mozzarella cheese recipe is from the cookbook The Homemade Vegan Pantry.
