They’re the best of both worlds: they have that crispy crust and chewy dough that you want in a pizza pocket. Feel free to get creative with your filling. I have provided suggestions for what I like to fill these vegan pizza pockets with, but feel free to add or take away ingredients as you see fit.

How to Make Homemade Pizza Dough:
Put all of the pizza dough ingredients into a large bowl and combine. The pizza dough may be made ahead of time by storing it in the refrigerator for up to three days.
How to Make the Pizza Pockets:
Preheat the oven to 500 degrees Fahrenheit. Use a sharp knife to chop all of the items you’ll be putting in your pizza pocket. The ingredients I suggest are ones I enjoy using, but feel free to play around with them.
I made homemade vegan mozzarella cheese to put in the pizza pockets, but you can use any store-bought vegan cheese. I used the vegan mozzarella cheese recipe from the cookbook The Homemade Vegan Pantry if you are interested in using the same vegan cheese that I did.
Place the pizza dough on a lightly floured surface and break it down into 9 smaller balls.
To prevent the dough from sticking, lightly flour a rolling pin. Roll out one ball of pizza dough into a circle or oval. Place 1-2 tablespoons of pizza sauce on the dough, keeping at least half an inch between the edge and the filling. On one half of the circle, spread your contents, leaving room at the edge. Top with red pepper flakes.
Fold the dough over the toppings. To keep the filling inside, pinch the edges together. To help it stay closed, take a fork and press it into the folded edge around the pizza pocket’s circumference.
Lightly oil a baking sheet with olive oil and place the finished pizza pockets on the sheet. Brush the top of the pizza pocket with more olive oil.
Place the baking sheet in the oven and bake the pizza pockets for 15 minutes until they are crispy and golden brown. Let the pizza pockets sit for a few minutes before serving because the middle is very hot!
The vegan pizza pockets can be stored in an airtight container for a few days.
