Vegan Avocado Mango Rice Bowl

Serves: 1-2
- 2 cups cooked brown rice
- ½ red bell pepper, diced
- ¼ cup chopped onion
- 1 mango, diced
- ½ avocado, diced
- ½ 15 oz. can of black beans
- Juice of 1 lemon
- Sprinkle of salt and pepper
- Cook red bell pepper and onion in a pan over medium-high heat until cooked through.
- In a large bowl combine all ingredients and toss gently.
