Vegan Banana Bread Granola (Oil-Free)

Serves: about 5 cups
Ingredients
  • 3 cups rolled oats
  • ½ tbsp. cinnamon
  • 1½ tbsp. coconut sugar
  • ¼ tsp. sea salt
  • 1 tbsp. chia seeds
  • ½ cup chopped mixed nuts
  • ⅓ cup maple syrup
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 ripe banana, mashed
Instructions
  1. Preheat oven to 350.
  2. Mix the oats, cinnamon, coconut sugar, sea salt, chia seeds and nuts together in a large bowl.
  3. In a small saucepan over medium low heat, warm the maple syrup and vanilla bean paste. Once warm, remove from heat and whisk in banana puree until well combined. Pour over the dry ingredients and mix well.
  4. Spread the mixture evenly onto one baking sheet lined with parchment paper and bake for 20-25 minutes or until golden brown.
  5. Once the granola is visibly browned, remove from the oven and lightly toss with a fork to let the heat escape. Cool completely on the baking sheet.
