Vegan Chocolate Almond Butter Popsicles |  The Vegan Abroad

These Chocolate Almond Butter Popsicles were inspired by my Sweet Chocolate Almond Butter recipe. I have been on a huge popsicle making kick lately, so I am always trying to come up with new ideas. Popsicles are such as easy dessert to make. I love ice cream, but making it at home can be kind of annoying considering that I don’t have an ice cream maker so I have to stir it by hand. Popsicles are easy peasy. You just mix all of your ingredients together, pour into a popsicle mold, wait a few hours, and you have delicious popsicles that are a perfect snack or dessert!

Recipe

Serves: 4-5 popsicles

Ingredients

  • 1 can full-fat coconut cream, refrigerated overnight
  • 1 ripe banana
  • 2 tbsp. almond butter
  • 1/4 cup cacao powder
  • 2 tbsp. maple syrup
  • 1/2 tsp. vanilla extract

Instructions

  1. Open the can of coconut cream and scoop out the solid white cream into a blender. Add all of the other ingredients and blend until smooth.
  2. Pour the mixture into a popsicle mold, add popsicle sticks, and freeze for at least 4 hours.
  3. Remove the molds by running them under hot water for a few seconds.
