I know the thought of black beans in a dessert is probably disgusting, but these black bean brownie muffins will 100% change your mind. All of the other ingredients completely cover up the taste of the black beans in the brownies, and the black beans actually provide a nice texture for the brownie muffins.
These black bean brownie muffins are 100% vegan. They can also be made gluten-free as long as you use gluten-free oats. They are also incredibly easy to make. You just blend all of the ingredients together, minus the vegan chocolate chips, in a food processor. Then you stir in the vegan chocolate chips. Add the batter to a muffin tin, and cook for 15-18 minutes. Voila! You have a delicious dessert that tastes great and is much healthier than most desserts out there.
Note: You can also make these vegan black bean brownies in a regular brownie pan, I like using the muffin tin, so you don’t have to worry about cutting it later. I also found this brownie pan that already has the brownies in individual slices.

Black Bean Brownie Muffins (Vegan and Gluten Free)
Ingredients
- 15 oz can black beans
- 2 tbsp cacao powder
- 1/2 cup quick oats use gluten-free oats if you are making this recipe gluten-free
- 1/3 cup maple syrup
- 1/4 cup almond butter
- 1/4 tsp salt
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- pinch of stevia
- 1/2 cup vegan chocolate chips
Instructions
- Preheat oven to 350 F, and line a muffin tin with paper cups or silicone baking cups.
- Combine all ingredients except the chocolate chips in a food processor, and blend well until smooth.
- Stir in the vegan chocolate chips.
- Scoop batter into the muffin tin.
- Cook for 15-18 minutes. Let cool 10 minutes before eating.
