Vegan Avocado Mango Rice Bowl  | The Vegan Abroad

Last year was the first time that I have ever purchased a mango. I know, that sounds crazy! I liked them, but I never quite understood why people were so obsessed with them. Recently I was at the grocery store and I decided to buy a mango. I kind of forgot about it so it just sat on my counter for about a week. When I finally decided to eat it, it was one of the most delicious things that I have ever eaten! It turns out that the mangoes that I had eaten last year weren’t fully ripe. The lesson here is to always eat ripe fruit because it tastes so much better that way.

After eating that mango I have been obsessed with wanting to put mango on everything, so that is how this Avocado Mango Rice Bowl was born! This recipe is super satisfying, and perfect for summer. This past week we had family visiting us, and I decided to make this one night for dinner while everyone else was eating chicken and steak (EWW!). Our family kept on commenting on how yummy my meal looked. Actually, almost every single meal I made they said looked amazing. Humans are naturally attracted to fruits and vegetables because that is what our bodies are meant to eat. Nothing about seeing dead animals on plates looks appetizing to me, so I am so grateful to be able to eat delicious foods like this Avocado Mango Rice Bowl that nourishes my body, is good for the planet, and no animals needs to suffer.

Ingredients
  • 2 cups cooked brown rice
  • ½ red bell pepper, diced
  • ¼ cup chopped onion
  • 1 mango, diced
  • ½ avocado, diced
  • ½ 15 oz. can of black beans
  • Juice of 1 lemon
  • Sprinkle of salt and pepper
Instructions
  1. Cook red bell pepper and onion in a pan over medium-high heat until cooked through.
  2. In a large bowl combine all ingredients and toss gently.
